Cinnamon Crunch Protein Waffles
LIFE UPDATE: I bought a waffle maker... and I have never felt more complete. I have been obsessing over waffles ever since my marathon ended, that has been my main craving. Fortunately they aren't crazy expensive so I've been able to fulfill my waffle cravings thus far with a normal waffle, but this can't become a regular habit. Waffles are delicious and great for running fuel, but based on how much I've been moving lately I don't need that much fuel in the tank, if you know what I mean.
SO I became a problem solver and decided I can continue eating waffles if I buy my own waffle maker and create a healthy waffle mix so I can eat waffles on the daily.
I teamed up with Quest and GNC and came up with a BOMB protein waffle recipe for their Cinnamon Crunch protein powder. One waffle has over 27 grams of protein which makes it an ideal breakfast to keep you full throughout the morning. I topped mine today with almond butter, whipped cream, and maple syrup. Tomorrow I'll probably just pick one topping but I was feeling so excited I decided to go for all three.
The Quest protein powder was super easy to cook with and added a delicious cinnamon sugar flavor to the waffle. I am definitely buying a whole bucket of this stuff, it was seriously that good. It also didn't have the weird thick consistency that a lot of items baked with protein powder seem to have. I have heard before that Quest is a great protein powder for baking and this definitely proved that anecdote right.

Cinnamon Crunch Protein Waffle
- 1 scoop of Quest Cinnamon Crunch Protein Powder
- 1 egg
- 1 egg white
- 3 tbsp soy milk
- 1/2 tsp baking powder
- 1/4 tsp baking soda
Combine all ingredients in a bowl and whisk until combined. Put your waffle iron on medium heat. Spray the iron with Pam or rub with oil before pouring batter into lower waffle iron. Close the lid and flip, and flip to the other side when the light turns green. And Ta-Da! Waffle! Now top with everything sweet and call it a day.
