4 Ingredient Energy Bites Recipe
Sometimes you just need a pick me up, something that can brighten your day a little and give you a moment of peace with yourself. For me these energy bites are exactly that. They are SO mouthwateringly good, so simple. And so easy to make. I put them in the freezer and pop one in my mouth when I am craving something sweet.
The best part is these energy balls actually have very balanced macros, offering about 150 calories in 6 bites, 15g fat, 15g carbs, and 4g protein.
- 1/2 cup raw unsalted cashews
- 1/2 cup raw unsalted macadamia nuts
- 7-8 seeded medjool dates
- 6 tablespoons coconut oil
Melt the coconut oil in the microwave making sure it's a liquid consistency. Add all ingredients to a blender and blend away!
Make sure to give it a few good blends to make sure most of the nuts are incorporated. This should turn into a thick paste.
Take a baking sheet lined with parchment paper and spread the paste into the paper (don't use your hands- too sticky!). Use the paper to hell shape the paste into a square. It's going to be super sticky but the parchment paper shouldn't stick.
Place in the freezer for an hour.
Once cooled, take this out and cut into your desired serving size. I make mine into little bites so I can munch on a few at a time. Place these into a bag in the freezer to keep them.
