Peanut Butter Energy Bites Recipe
So I am obsessed with peanut butter, nothing new here. It's gooey and salty and sweet, seriously point me to a person who doesn't love peanut butter? Also who doesn't love when we have an excuse to eat peanut butter all the time?
That's why these bites are amazing. They have protein from the PB, protein and fiber from the oats, and cinnamon which helps control blood sugar (think less fat storage, more fat burning). I had a few of these before my workout today and they really got me going. Then I ate them when I got home and they made my tummy happy. And they are SO EASY. Seriously even the most newbie cook can do this. Pin it, print it, save it for later cause I promise you can make these.

- 1/2 cup Peanut Butter
- 1/2 cup agave nectar
- 1 cup oats
- 1-2 tsp cinnamon
- 1/4 cup vegan chocolate chips
- 1-2 tbsp chia seeds (more chia= more crunchy)
- 1/8 tsp salt
Melt the peanut butter down in a medium size bowl (about 30 seconds in the microwave), add the agave and mix. Once these two are mixed well, dump in everything else and stir until completely incorporated. Seriously, that's it!
Now throw this in the fridge for 20 minutes. This allows the balls to be shaped without getting too sticky.
After 20 minutes take the mixture out and shape into balls using your hands and a tablespoon measured. You will end up with some peanut butter on your hands, feel free to lick this off like a dog. Pop these back in the fridge to cool and you are done! So easy right?
